Cinnamon Roll Ice Cream Sandwich

A cinnamon roll split in half is already a sandwich waiting to happen. Freeze it with ice cream in the middle and you have something kids will request for the rest of the summer.

Ingredients
- 4 cinnamon rolls
- 1 pint ice cream, slightly softened
- Optional: sprinkles, mini chocolate chips, crushed graham crackers
Instructions

Split each cinnamon roll horizontally. Chill the halves in the freezer for 15 minutes so they firm up.

Spread a thick layer of softened ice cream on the bottom halves.

Press the top halves on gently, then roll the exposed edges in sprinkles, chips or graham crumbs.

Wrap each sandwich in parchment and freeze at least 2 hours.

Let them sit at room temperature for 3 to 4 minutes before eating so the roll softens again.
Tips
- Chilling the halves first is what keeps them from squashing.
- Slightly softened ice cream spreads without tearing the swirl.
Variations
- Use two flavors side by side for a split sandwich.
- Dip half of each frozen sandwich in melted chocolate and re-freeze.
