Safety versus quality

Most of what people notice on day three is a quality problem, not a safety one. A plain cinnamon roll with a sugar icing is fairly stable at room temperature. A roll with cream cheese icing, or one you have added fruit or whipped cream to, should be refrigerated and treated like any other dairy dessert.

How to tell a roll is done

Throw it out if you see any mold, if it smells sour or fermented, or if the dough has gone slick or sticky in a way it was not before. Dry and firm is not spoiled — that roll is a candidate for bread pudding or French toast.

Best use for each day

  • Day 1: eat it warm, as is.
