Warm rolls plus toppings people add themselves. It scales easily, it needs almost no plating, and it turns dessert into something guests do rather than something you serve.

Quantities

  • 1.5 rolls per guest if the bar is the dessert.
  • 1 roll per guest if there is a cake or other dessert too.
  • About 2 tablespoons of icing per roll.

The setup, left to right

  1. Plates and forks.
  2. Warm rolls in a covered baking dish, held at 300F and brought out in batches.
  3. Icings: classic vanilla, and one second option like cream cheese or maple. Warm, in small pitchers.
  4. Sauces: salted caramel, chocolate, berry compote.

Keeping rolls warm for two hours

Cover with foil and hold at 300F, refilling the serving dish in batches instead of putting everything out at once. Uncovered rolls on a table go cool and firm within 20 minutes.
